A unique gastronomic evening filled with lectures, tastings and practical cooking inspiration about seaweed — an ocean ingredient with endless possibilities. From sea to plate, you explore seaweed's flavours, history and culinary potential alongside three experts.
Sofie Laage Christiansen opens the evening with the story of seaweed's world: what it is, why humans have cultivated it for centuries, and which pitfalls to be aware of. Professor emeritus Ole G. Mouritsen, expert in gastrophysics, then takes you into seaweed's sensory universe and reveals the secret behind its characteristic umami flavour. Finally, chef Liselotte Kira Gregers Andersen demonstrates concrete methods for working with seaweed in your own kitchen — with generous tastings throughout.
Program:
- 17.00: Self-guided tour at Fjord&Bælt
